Panettone Cake with Marron Glacé

T’a Milano’s handmade Panettoni are prepared as tradition demands, using sourdough and no preservatives or artificial flavourings, following the recipe handed down by the Alemagna family from father to son and into the hands of Tancredi and Alberto, founders of T’a Milano and great grandchildren of the famous Gioacchino Alemagna.

The origins of the Panettone date back to the times of Ludovico il Moro, when it was known as Pan dei Toni. Its role as a traditional Christmas cake, now available with many variations on the theme, may however be attributed to Gioacchino Alemagna, great grandfather of Tancredi and Alberto Alemagna. The pursuit of the highest quality ingredients and of unusual pairings later gave life to the Panettone without raisins and candied fruits but with Marron Glacés. The classic Panettone, made using sourdough and free-range eggs, is thus enriched with the irresistible aroma and flavour of marron glacés.

28 g granulated sugar
140 g milk
56 g egg yolks (approx. 3)
140 g cream
135 g dark chocolate
Mix (do not beat) the egg yolks and sugar.
Bring the cream to the boil with the milk and pour over the egg yolks.
Cook until thickened at 82/84°C.
Sieve and pour the custard thus obtained over the previously chopped dark chocolate.
Mix with a hand blender.
Cover with film and leave to cool in the refrigerator for at least 12 hours.
For a velvety smooth cream, add some whipped cream to the mixture before serving.
Store in the refrigerator.

The minimum quantity (traces) and the uncertainty of this accidental contamination does not in any way preclude its consumption, except for any subjects highly allergic to mustard.

T’a Milano normally guarantees the processing of orders within 3 working days from the receipt of the online purchase, during peak season the timing may be longer. The timing of couriers is not established by T’a Milano, therefore the actual delivery of the order, from the moment the selected courier is picked up, may be variable, even depending on the destination areas.
