With its typical aroma and flavour, T’a Milano’s Panettone with Marron Glacés, handmade using nothing but the highest quality ingredients, calls to mind a traditional Milanese-style Christmas. T’a Milano’s handmade Panettoni are prepared as tradition demands, using sourdough and no preservatives or artificial flavourings, following the recipe handed down by the Alemagna family from father to son and into the hands of Tancredi and Alberto, founders of T’a Milano and great grandchildren of the famous Gioacchino Alemagna.

T’a Milano Panettone: a sweet return to tradition combined with creativity.

The origins of the Panettone date back to the times of Ludovico il Moro, when it was known as Pan dei Toni. Its role as a traditional Christmas cake, now available with many variations on the theme, may however be attributed to Gioacchino Alemagna, great grandfather of Tancredi and Alberto Alemagna. The pursuit of the highest quality ingredients and of unusual pairings later gave life to the Panettone without raisins and candied fruits but with Marron Glacés. The classic Panettone, made using sourdough and free-range eggs, is thus enriched with the irresistible aroma and flavour of marron glacés.

28 g granulated sugar
140 g milk
56 g egg yolks (approx. 3)
140 g cream
135 g dark chocolate
Mix (do not beat) the egg yolks and sugar.
Bring the cream to the boil with the milk and pour over the egg yolks.
Cook until thickened at 82/84°C.
Sieve and pour the custard thus obtained over the previously chopped dark chocolate.
Mix with a hand blender.
Cover with film and leave to cool in the refrigerator for at least 12 hours.
For a velvety smooth cream, add some whipped cream to the mixture before serving.
Store in the refrigerator.

flavours), eggs, butter, sugar, egg yolk, natural yeast (wheat flour, water), rehydrated whole milk powder, emulsifiers: mono and
diglycerides of fatty acids, glucose syrup, flavourings, salt, cocoa butter. May contain nuts, mustard and soy.
Average nutritional value per 100g: energy 359 kcal/ 1510 kJ, fat 13 g, of which saturated 8.2 g, carbohydrates 53 g, of which sugar 28 g, proteins 6,7 g, salt 0.52 g.
